Pricilla -- I seem to have gotten over my problem. Just cleaned out the fridge this weekend and I found only one jar of cheese. AND it hasn't expired yet. Imagine that.

brooke -- Nope, but I think three out of the five were. Yes, I'm that lazy.

Tonya -- Funny! "Oh, wait! One more! Oh, wait! One more!" Someone likes her pickles.

storybeader -- I don't, actually. Which is the sad part. They were all crammed into the door shelves, which left little room for the stuff we actually do eat. Felt good to finally empty it out.

Mark -- Can't get enough of the stuff. I do like Italian, and some think I look Italian! Must be the hair.

Billing and Coding Education -- Mine was especially cheap (it was always on sale), which led to my overflow. It does go well with so many foods. Feel rich!

Poetikat -- Every single time I bought one, they were on sale. For some reason, my store has them perpetually discounted. Thank God (or not?)

I'm in school right now, so my food budget is pretty small. Parmesan cheese is cheap and I use it on everything! Salads, pasty, veggies, steak. It's so cheap and it makes me feel like I'm not as poor as I am.

My mom once had 15 jars of pickles in her frig. Watching her clean out the frig was like watching a magician pull out bunny after bunny after bunny after bun....

Corinna -- Same here. There are plenty more near-empty containers of stuff I'll never use. It's not like it's hard to clean it out, I'm just that freakin' lazy.

Beamer -- About the syrup, I knew it was in there for a long time. Wondered aloud about it, but only actually threw it out after writing this post. What the hell is wrong with me? Don't answer that. Love your clown pic, and really happy to read you had some blog downtime. I should check into that.

Data Entry Services -- It's evil, that's what.

Shieldmaiden96 -- OK, so the invitation is official. I need to discuss the next road trip with Ann. That, or get myself a GPS and come up there myself. But I'll need your phone number for when I get lost because we all know, as the sun rises every day, that I'm going to get lost. Oh, my good Lord, that recipe sounds delicious! And more importantly, I think it's something I can actually master. I'll let you know if I make it and whether or not I burned down the house in the process.

Hey, anytime you, yours, Ann, or any configuration of the Junk & Shampoo family wants to see the Northern Tier, our door is open. PA Grand Canyon and a fabulous dinner. Come see the leaves!
Anyhoodle, here's that recipe, and its super easy...

Two packages of spinach (boil in bag or the other kind, but NOT with butter)
3 eggs
1 cup of parmesan cheese
3-4 slices of bread of your choice, torn into pieces
olive oil

Preheat oven to 325. Cook spinach and press to remove water. Let cool slightly. In a bowl, mix spinach, beaten eggs, cheese, and bread.

Spritz a pie pan with nonstick spray and spread mixture in pan, I like to brush a little olive oil on top and sprinkle with pepper. Bake 35-40 minutes (depends on how shallow your pan is) until golden on top.

I've used all kinds of bread in this, from sandwich bread to crusty italian. Doesn't matter. You can also add mushrooms, roasted red pepper, artichokes, or whatever suits your fancy.
